If you like piña coladas...then you're in for a real breakfast treat! Inspired by my all-time favourite summer cocktail, these oats are super creamy, tropical, and fruity tasting. Transport your tastebuds to the taste of the tropics!
Ingredients:
1/4 cup gluten-free rolled oats
2 teaspoons chia seeds
1 tablespoon ground flax meal
1 scoop vanilla protein powder
1/2 cup full-fat coconut milk
2 teaspoons dairy-free yogurt
1/2 cup frozen or fresh pineapple
2 teaspoons lime juice (optional)
Directions:
Thoroughly mix all dry ingredients together in a bowl.
In a blender, add coconut milk, yogurt, and pineapple. blend until smooth.
Pour the liquid over the oat mixture, stir until fully mixed, and add in your lime juice.
Place oats in the fridge for 4 hours or overnight for best results.
Top with unsweetened shredded coconut, bee pollen, fresh pineapple, and a cherry.
