The best of both worlds: overnight oats & chia pudding in one! This recipe is perfect for days when you can't decide between the two, offers a lot of fibre & a refreshing flavour from the mango.
Ingredients:
2 tablespoons chia seeds
1 tablespoon flax meal
3/4 cup dairy-free milk
1/4 teaspoon Ceylon cinnamon powder
1/3 cup frozen mango
1/4 cup gluten-free or regular rolled oats
Blueberries (optional)
Granola (optional)
Directions:
1. Chia layer: Whisk the chia and cinnamon together with half the milk in a glass, and place in the fridge.
2. Mango layer: Blend half of the mango with the remaining milk in a blender to make a mango smoothie.
3. Mix in the remaining mango, oats, and mango smoothie together in a jar.
4. Allow the mixtures to soak overnight, or a minimum of 2 hours in the fridge.
5. Spoon the mango mixture on top of the chia seeds and decorate with desired toppings.
