High Protein Pumpkin Spice Waffles

Crispy golden on the outside, fluffy on the inside, and PACKED with protein to fuel your morning! It’ll surely become your favourite fall breakfast!🤎🍂


Ingredients

  • 3/4 cup unsweetened pumpkin puree

  • 2 large eggs

  • 2 tablespoons pure maple syrup

  • 1 cup unsweetened almond milk (any milk will work fine)

  • 1 tablespoon avocado oil

  • 1.5 cups gluten-free all-purpose flour (I used Bob's Red Mill)

  • 2 scoops of vanilla protein powder ( I used The Nourish Market Vanilla- save 10% with code ASHLEY10)

  • 1/2 teaspoon vanilla extract

  • 2 teaspoons pumpkin pie spice

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

Directions:

  1. Begin by preheating your waffle iron.

  2. Next, in a large bowl, mix all wet ingredients.

  3. Then, add in dry ingredients and stir until combined.

  4. Once the waffle maker is preheated, spray with cooking on both sides. Pour a 1/3 scoop of batter into each section of the waffle maker and close. Let cook for about 1.5 to 2 minutes, or until the green light comes on. If it needs more time to cook, close it and let cook for about 20-30 seconds longer.

  5. Use non-stick tongs to remove the waffles from the iron.
