Secretly healthy chickpea blondies made with peanut butter, maple syrup, and vegan chocolate chips. You won't be able to tell that flour wasn't used!
Ingredients:
2 cups chickpeas, rinsed and drained
1/2 cup nut butter of choice (my favourite is peanut butter!)
1/4 cup pure maple syrup
3 teaspoons pure vanilla
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup dairy-free chocolate chips plus 2 tablespoons
Pink salt to sprinkle on top.
Directions:
Preheat oven to 350°F and spray 8x8 inch pan with nonstick cooking spray.
Cover with parchment (spraying the pan prior to laying down parchment helps the paper stay secure)
In a food processor, add all ingredients except chocolate chips and process until the batter is smooth.
Fold in 1/4 cup of chocolate chips, then spread batter evenly in prepared pan. Sprinkle the remaining 2 tablespoons of chocolate chips on top. (TIP: lightly spray your spatula to prevent the batter from sticking.)
Bake for 20-25 minutes or until the toothpick comes out clean and edges are a tiny bit brown. The batter may look under done, but you don't want them to dry out!
Cool pan for 20 minutes on wire rack. Sprinkle with salt then cut into squares.
