Greek Inspired Chickpea Salad

This super refreshing salad is loaded with goodness and easy to whip up. Sure to be a crowd-pleaser!


Ingredients:

  • 1 can chickpeas, drained and rinsed

  • Half pint cherry tomatoes, halved

  • 1/3 cup kalamata olives, halved

  • 1/3 cup chopped green pepper

  • Half a cucumber, sliced and halved

  • Juice of 1 lemon

  • Organic sheep feta cheese (amount to liking, I used about 1/2 cup)

  • Chopped basil (amount to liking, I used 1/2 cup)

  • Chopped parsley (amount to liking, I used 1 cup)

-Optional add in avocado (TIP- only add enough avocado to the bowl you're eating or it will brown being kept in the salad overnight)


Directions

  1. Add all ingredients to a bowl except for the cheese and avocado. Mix well.

  2. Allow for the salad to sit for at least 2 hours to absorb the flavour.

  3. When ready to serve, add the sheep feta and avocado.
