Traditional Italian Style Pasta Sauce

Ingredients:

  • 1 tablespoon cold-pressed extra virgin olive oil

  • 1 small yellow onion, chopped

  • 3 cloves of garlic, minced

  • 1 jar of San Marzano passata strained tomatoes (660ml)

  • 3 teaspoons Italian herb seasoning blend

  • 1 cup frozen chopped kale

  • Pasta noodles of choice

Directions:

  1. Set a medium pot over medium-high heat.

  2. Add the olive oil to the heated pot.

  3. Add the onion and garlic and cook until the onions are slightly translucent about 5 minutes.

  4. Stir in the tomatoes and lower the heat to medium, then stir in herb seasoning blend, stirring in fully.

  5. Cook for about 25 minutes, stirring occasionally.

  6. Add in your chopped frozen kale, and cook for an additional 5 minutes. 6. when ready, the sauce should have a nice, thick consistency.

  7. Meanwhile, boil water for the pasta with 1 tablespoon of salt.

  8. Cook the pasta according to the directions on the package, then drain and rinse your noodles, transferring them to a serving bowl or platter.

  9. Pour the sauce over the pasta and top with desired protein (I used leftover chicken).
