Start off your day with this nutrient-dense and tropical tasting eggs. Made with ingredients like coconut milk and flakes, chopped nuts, almond butter, fried banana and pear, this will leave you feeling satiated and satisfied!
Ingredients:
2 large eggs
Unsweetened coconut milk
1 ripe banana
1/2 pear
Topping:
Unsweetened shredded coconut
Chopped pecans or walnuts
Almond butter
Directions:
Begin by whisking the eggs together with a splash of coconut milk. Set aside.
Slice the banana, and add half to the egg mixture. Set aside other half to top eggs with.
Slice half of your pear, slicing in strips. Set aside.
Cook your eggs to your desired preference.
Plate and decorate with the remaining banana slices, pear, coconut, chopped nuts, and seal in the toppings with drizzled almond butter on top.
