Grain-Free Cashew Coconut Bites

No-bake, vegan, gluten, and refined sugar-free deliciousness!


Ingredients:

  • 1/2 cup cassava flour

  • 1/2 cup almond flour

  • 1 scoop vanilla protein powder

  • 1/2 cup cashew butter

  • 2 teaspoons pure vanilla extract

  • 1/3 cup pure maple syrup

  • 1/3 cup unsweetened shredded coconut

Directions:

  1. Combine cassava flour, oat flour, and protein together. Set aside.

  2. In a separate bowl, whisk together the cashew butter, maple syrup, + vanilla extract.

  3. Add in flour mixture and mix well. Once mixed well, add the shredded coconut.

  4. Roll into bite-sized balls and store them in the fridge.

Note: almond butter makes for an equally delicious substitute for replacing the cashew butter.
