Not only is this recipe a no-bake, but it's also one bowl and no cashew butter required! Soft as cookie dough and covered in a crunchy layer of dairy-free dark chocolate. You only need 6 ingredients for this recipe, so enjoy its delicious simplicity!
Ingredients:
1/3 cup raw, unsalted cashews
1 1/4 cup almond flour
1/2 ripened banana
2 tablespoons pure maple syrup or raw honey
Pinch of pink salt
1/4 cup dark dairy-free chocolate chips
Directions:
In a food processor, combine together cashews and flour into a fine powder
Add banana, sweetener of choice, and salt. Mix again until the dough is formed. You can taste and add more sweetener or salt if needed.
Remove the blade from the food processor, and using a spatula, scrape any excess dough from the side into the bowl.
Roll the dough into balls, then place the balls onto a baking sheet lined with parchment or silicone base.
Melt your chocolate in a saucepan over low heat.
Once melted, coat the balls or dip only halfway. While the chocolate is still soft, you can sprinkle the shredded coconut onto them.
Place in the fridge or freezer for 30 minutes. They can be stored for 3-4 weeks in the freezer, or 4-5 days in the fridge.
