Creamy Zucchini Sauce

Zucchinis are in season right now, and what better way to enjoy them than by making them into a delicious pasta sauce! Zucchini contains a variety of vitamins, minerals, and beneficial plant compounds. Cooked zucchini is exceptionally high in vitamin A and high in antioxidants. Zucchini also contains soluble and insoluble fibre and has high water content. Paired with fresh basil, this summery-inspired sauce is sure to be a crowd pleaser!


Ingredients:

  • 3 large zucchinis

  • 5-6 tablespoons of Italian seasoning

  • 3 tablespoons cold-pressed extra virgin olive oil

  • 1 cup water

  • 2 tablespoons of dairy-free creamer (feel free to substitute regular cream here)

  • 8-10 fresh basil leaves

  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 375ºF.

  2. Wash the zucchini and cut it into slices. Arrange the slices on a baking sheet. Sprinkle some salt, pepper, 1 tablespoon of olive oil, and 3 tablespoons of Italian seasoning and place in the oven for 15-20 minutes.

  3. Meanwhile, boil your favourite pasta of choice.

  4. Place the cooked zucchini in a blender or food processor. add in your water, cream, remaining olive oil, Italian seasoning, and basil leaves.

  5. Blend until a creamy liquid texture forms.

  6. Transfer the sauce into a saucepan to warm up, then pour it over your pasta. top with additional fresh basil and any other ingredient you may like (you can add in a protein like chicken and/or some extra grilled vegetables to put on top!).
